Hairy Crab Roe Indulgence at StarWorld Macau

22 October 2012, Hong Kong and Macau —- Renowned for its attentive “Asian Heart” service, StarWorld Macau understands the Chinese custom of “eating crabs, drinking wine, appreciating chrysanthemums and composing poems” in Autumn, the traditional crab harvest season. Jade Garden, the Shanghainese restaurant at StarWorld Macau, is delighted to present a tantalizing seasonal menu of hairy crab roe featuring this special crustacean freshly flown in from the renowned Taihu Lake, welcoming guests to enjoy a succulent crab feast with their beloved friends and families from now until 30 November 2012.

Selection of Authentic Taihu Lake Crabs

The hairy crab is known as a Shanghainese delicacy first and foremost. This crab roe menu at Jade Garden features the premium hairy crabs from Taihu Lake, mid way between the southern part of Jiangsu province and northern part of Zhejiang province near Shanghai. Taihu Lake is the third largest freshwater lake in China, with continuous water supply, stable quality and high nutrition. Taihu Lake crabs are famed for their creamy and sweet roe as well as the meat quality. Jade Garden especially selects crabs weighed between 3 tael to 4 tael (90 g and 120 g), which are about half the size of an adult palm, for making Shanghainese the crab roe dishes.

Bespoke Matching to Highlight the Freshness of Ingredients

Authentic Shanghainese cuisine was developed based on Huaiyang cuisine, one of the four major Chinese regional cuisines. Jade Garden delivers an unmistakable melange of Suzhou and Zhejiang tastes, underpinned by fresh ingredients, delicate cutting, slicing techniques and thermal control.

In order to retain the original flavor of the crab roe, the chefs at Jade Garden specially select light-flavored ingredients to allow the crab to dominate.  Shanghainese Stir-Fried Crabmeat has always been the most popular dish in Jade Garden’s crab roe menu.  The chefs handpick about one catty of both male and female crabs for this dish. Since the meat from male crabs is more tender and female crab roes tend to be creamier. This exquisite combination is skillfully cooked with fresh vegetables, bringing out its unique taste.

Shanghainese Crabmeat with River Prawnsis based on another signature dish of Jade Garden, Sautéed Fresh River Water Prawns. The chefs carefully select fresh river prawns of similar size and remove the intestine at the back of each prawn. Stir-fried with exquisite crab roe, the prawns offer crispy, tender and smooth texture. The dish combines both the freshness of river prawns and the sweetness of crab roe.
